Ingredients

For the Batter:

3 eggs

2/3 cup sugar

2/3 cup all-purpose flour

1 cup whole milk

4 tbsp melted butter

1 tsp vanilla extract

1/4 tsp salt

For the Apples:

1 tbsp butter

4 golden delicious apples

1/2 cup sugar

3 tbsp rum

Instructions

  1. Preheat oven to 400 degrees.
  2. Grease a 9-inch pie pan and coat with sugar.
  3. Whisk the sugar and the eggs together in a medium bowl.
  4. Whisk in the flour and about 1/4 cup of the whole milk to make a smooth paste.
  5. Then whisk in the rest of the milk, the melted butter and the vanilla extract.
  6. Let the batter rest while you prepare the apples.
  7. Peel and core the apples. (see notes)
  8. Slice the apples into about 1/2 inch slices.
  9. In a large skillet, melt 1 tbsp butter over medium heat and then stir in the sugar and rum.
  10. Add in the apple slices, stirring to coat with the sugar mixture.
  11. Cook for about 10 minutes, stirring occasionally, until the apples begin to soften.
  12. Pour 2 cups of the batter into prepared pie pan.
  13. Put the apple slices in the pie pan, reserving the liquid in the skillet to glaze the clafoutis when it’s done baking.
  14. Pour the rest of the batter over the apple slices.
  15. Bake in preheated oven for 30-35 minutes, until it’s golden brown and the center is set.
  16. I put the pie pan on a baking sheet in case it bubbles over.
  17. When it’s done, remove from oven and pour reserved liquid over the top.
  18. Serve warm or at room temperature.
