Ingredients

4 Tbsp butter

2-3 Mutsu Crispin apples, sliced thinly

3/4 cup flour

3/4 cup milk

1/2 tsp salt

1/4 tsp baking powder

1 Tbsp sugar

4 eggs

Topping:

1/3 cup sugar

2 tsp cinnamon

Instructions

  1. Preheat oven to 400 F oven.
  2. Slice apples into 1/4 inch thick slices.
  3. Place butter into a 12″ cast iron frying pan and place in the oven to melt butter.
  4. In a bowl combine the flour, baking powder, sugar, salt, milk and eggs and whisk to combine. or place in a blender and pulse a few times to combine.
  5. Place the sliced apples into the bottom of the hot pan on top of the melted butter. Pour egg mixture over apples.
  6. Work quickly so that the pan remains hot.
  7. Combine sugar and cinnamon and sprinkle over the top of the egg mixture evenly.
  8. Bake in oven for 20-25 minutes until golden brown.
